Couscous is generally a healthful food that you can feel comfortable including as part of a well-balanced diet. It's naturally low in Fat, can be a good source of Fiber (the whole wheat version), and provides some Protein, B Vitamins, and Minerals

Ingredients:
Couscous -100gm
Green capsicum - ½ (20gm)
Red capsicum – ½ (20gm)
Yellow capsicum- ½ (20gm)
Carrot - 1 (50gm)
Cucumber- ½ (50gm)
Lemon Juice - 1 Teaspoon
Olive Oil - 2 Spoons
Coriander - Some Leaves
Oregano/Chilli Flakes/Black Pepper: as per taste
Method:
Boil 100gm couscous in the same amount of water.
Add salt to taste.
Meanwhile chop all vegetables like bell pepper, capsicum, cucumber, coriander leaves & carrot.
Mix all ingredients like couscous, olive oil, chopped veggies, coriander leaves, oregano, chili flakes & black pepper in a bowl.
Service it with lemon juice & Mint leaves.
