Quinoa Salad

Quinoa, is rich in B Vitamins and Minerals. It also has antioxidants and heart-healthy monounsaturated fat.
Quinoa Salad/B Vitamins and Minerals
  • Quinoa: 1 cup

  • Pomegranate: 2 Tablespoons

  • Cucumber: 1 Diced (English/ Indian)

  • Mint Leaves: 8-10 leaves(chopped)

  • Feta Cheese: 30gm (optional)

  • Salt: ¼ tsp

  • Dressing: (mix all the below ingredients in a bowl)

  • Olive Oil: 1tsp

  • Black Pepper

  • Lemon Juice: 1lemon

  • Boil 1 cup of Quinoa With 2 cups of water with salt (prefer black salt, very low).

  • Keep aside when boiled after draining extra water from it & cool it to room temperature.

  • Now put pomegranate, cucumber, and mint leaves Mix with boiled Quinoa.

  • Now put a Dressing of lemon on it.
