Quinoa, is rich in B Vitamins and Minerals. It also has antioxidants and heart-healthy monounsaturated fat.

Quinoa: 1 cup
Pomegranate: 2 Tablespoons
Cucumber: 1 Diced (English/ Indian)
Mint Leaves: 8-10 leaves(chopped)
Feta Cheese: 30gm (optional)
Salt: ¼ tsp
Dressing: (mix all the below ingredients in a bowl)
Olive Oil: 1tsp
Black Pepper
Lemon Juice: 1lemon
Boil 1 cup of Quinoa With 2 cups of water with salt (prefer black salt, very low).
Keep aside when boiled after draining extra water from it & cool it to room temperature.
Now put pomegranate, cucumber, and mint leaves Mix with boiled Quinoa.
Now put a Dressing of lemon on it.
